Fresh Pineapple Orange juice

I had some fruit sitting waiting to be devoured. So i decided to juice them.

Pineapple orange juice, makes 1 liter

1 pineapple, skin off, rind out, cubed
3 oranges, peeled.

Add to juicer and juice away! Beats anything in a store bought box or bottle.
Serve with ice, or store in a mason jar to keep fresh for a couple days.

Try to use the sweetest fruits you can find for maximum flavor

Strawberry Kiwi juice

I had a ton of strawberries I had got on sale earlier in the week. So I looked up some recipes to see what’s the best way to juice them.

Ended up making up my own recipe

2 lb strawberries
4 kiwi fruit
2 apples ( for more sweetness add more sweet fruits like apples or pears)

I peeled the kiwi, unstemmed the strawberries and cores the apples.

Juice and serve

The strawberries I used were not the sweetest in town so this turned out a bit tangy. Try to use the sweetest fruit you can find for best results.

Store in air tight jars to preserve freshness, or just serve immediately because it tastes better fresh

Stir fried chicken with green beans

Green beans are one of my all time favorite foods. I love them stir fried in some soy sauce with a side of rice.
Here is a recipe I use often.

Ingredients:
2-3 chicken breasts. Slice as big or as small as you like. I cut them into large strips.
1/2 tsp each Salt, black pepper, garlic powder. To marinate the chicken.

1 lb fresh green beans, cut if you like.
1 large onion, sliced
1 cup chopped mushrooms.

Soy sauce to taste ( about 2 tbsp)

1- marinate the chicken for about 20-30 mins to 2 hours.
2- in meduim high pan on stove, add a couple tsp olive oil, add chicken when pan is hot.
3- let it cook for 2 mins then flip chicken on the other side.
4- keep stirring chicken until cooked from inside and no longer pink.
5- add the onions, mushrooms and green beans. Stir.
6- after about 5-10 mins (when beans are cooked) add soy sauce and anything else you like to taste.

Serve with rice, bread, salad, or just like that alone.

Carrot Apple Ginger Juice <3

Absolutely fantastic and amazing. I loved every bit of it and drank the whole thing in a minute.

Ingredients:
4 medium carrots, peeled
2 red apples
1/2 inch peeled ginger root.

Juice and serve! This doesn’t make much, barely a glass. So if you love it like I do, you can easily double or triple the amount.

My first green juice experience

So I bought this new juicer from amazon and it arrived yesterday. I’ve been interested in juicing for a while as it can be very beneficial for ones health.

I tried the recipe on Joe Cross’s website called the Mean Green Juice

So I gathered up my ingredients and washed them up, cored the apples and peeled the cucumber. Added kale, celery, and an inch of ginger.

Shoved them into the juicer.

took out the pulp and rejuiced it. Look how much leftover was in there!

To be honest, I was scared to try it.. I preferred washing the juicer first.. Let it mentally sink in lol. But then, no more hiding or running away.

Man, I was in for a treat.. Or was I?

I WISH I peeled the ginger, or maybe I put too much, but whatever it was, I’m pretty sure it’s not supposed to taste like that. “That” is unlike anything I have tasted in my life. It was bearable, and I loved the smell of ginger in it. But it was kinda spicy. Let me see how I can put this in words. It tasted a lot like pure coconut water, with a hint of celery and a lot of ginger. I didn’t taste any of the greens.

I couldn’t swallow it, my throat was kinda burning from the spiciness lol.
So I peeled a mango and blended it with the green juice in the blender. Ah, so much more bearable. I found the trick to it is to sip it as quickly as possible through a straw. Maybe some ice will help.

I wish you could see the faces of my kids watching me drink it, while they shoved their faces with leftover pizza.

Yeah, Next time I’m peeling the ginger.

Strawberry Grape Spinach Smoothie

This was good and relatively sweet from the grapes. No added sugar here 🙂

Ingredients:
2 cup ripe red Strawberries
1 small bunch of sweet red grapes 25-30 grapes
1 cup vanilla coconut milk. Or any substitute you like.
One large handful of spinach.

Blend together until very smooth. Serve immediately.

Easy Oven baked Chicken Fillets

Oven Baked Chicken Fillets

Ingredients:

3lbs boneless skinless chicken breast (about 4 large ones)
2 tbsp vinegar
2 tbsp olive oil
2 tsp salt
1tsp each black pepper, paprika, garlic powder

Pre Heat Oven at 350

1- Clean chicken and slice each breast horizontally into 2 thinner pieces.
Cut vertically into smaller pieces if necessary.
2- combine all ingredient in a bowl to marinate.

3- cover a baking tray with foil and place the chicken on it.

See how the size of the fillet is? Like that. about the size of your palm

4- bake at 350 for 15 mins. Flip once and leave it for another 10 mins.

5- broil on high for no longer than 5 mins each side. Keep watching it until it’s nicely browned. Then flip and repeat.

You’re done! Serve with whatever you want! I made a huge salad and that was our dinner 🙂
I love how moist the chicken was, it usually dries up a bit when I do it other ways.

I had extra chicken leftover so I sliced it up and saving it for lunch, chicken salad tomorrow!

5 min Tilapia Fillets

Quick 5 min tilapia fillets, easy lunch or dinner, very moist and flavorful you will love it 🙂

Ingredients: serves one person
2 tilapia fillets, thawed in fridge
2 stalks green onions, chopped
2 mini bell peppers or half a large one, any color (I had orange)
1/2 tsp each of salt, black pepper, garlic powder, paprika.

Heat small pan on medium high heat, drizzle some oil (I used olive oil)

Place raw fillets in pan.
Sprinkle the spices on top of the fillets.
Let sizzle for 2-3 mins. Then flip.

Add the onions and peppers and cover for about 3 mins. Fish should be moist and cooked, peppers lightly steamed and crunchy. If you like it a bit more brown u can leave in for a couple more mins but make sure fish doesn’t get too flaky and break up.

Add to plate and gobble up. 🙂
Best served with a salad, or a side of brown rice.
I ate it by itself with no sides. I was too hungry lol.

Watermelon Smoothie

Watermelon smoothie:
I had this quarter of a watermelon sitting in the fridge, waiting its destiny. So before it goes bad, I stuffed it in the blender with some other fruits. Here’s what it came out to be.

**hint: try to buy the sweetest fruits you can so you are not tempted to add any extra sweeteners”

Ingredient:

1/4 a large watermelon
One Bosc pear
One banana
5 large red ripe strawberries

Chop, core, peel, hull all of the above.
Throw in blender. blend til nice and smooth.

Pour and serve! add ice if you like it super cold.

Homemade burger recipe

Craving burgers but having the self control to NOT run to the nearest fast food joint is hard. Hard, but not impossible. I’m trying to wean my family off of proccessed, unhealthy foods. I talk more about the challenge here.

Homemade Burgers:

Ingredient:
2 lbs 93% lean ground beef
Half a bunch parsley
One jalepeno
One onion
4 cloves garlic
1 tbsp salt
1 tbsp black pepper
1 tsp mixed spice

Burger buns ( I used whole grain wheat)
Burger toppings: tomatoes, lettuce, onions, pickles, ketchup, mayo, cheese, etc… Whatever u like.

In food processor: add parsley, pepper, onion and garlic. Chop til fine.

Add to ground beef in large bowl. Add spices. Mix well

Make into patty shapes. Grill and serve as you like it 🙂
